The nutritional value of lettuce varies with the variety. Lettuce in general provides small amounts of dietary fiber, some carbohydrates, a little protein and a trace of fat. Its most important nutrients are vitamin A and potassium. The vitamin A comes from beta carotene, whose yellow-orange is hidden by green chlorophyll pigments. Beta carotene, of course, is converted to vitamin A in the human body. The darker green, the more beta carotene.

Like all lettuces romaine has a vary high water content and very few calories (about 10 calories per cup). Generally, the darker the green, the more vitamins and minerals (beta-carotene, calcium and iron, etc.) So it should be no surprise that romaine is the most nutritious of all lettuces. Romaine is an excellent source of vitamin C, (more than 5 times that of iceberg lettuce).

The nutritional breakdown of Butter lettuce as a food source is 61% carbohydrate, 14% fats and 25% protein.
Butter lettuce provides 15 to 35% of daily Vitamin A needs based on a 2000 calorie diet. It is also an excellent source of Vitamin K, with 56 mcg providing 70% of the daily value. A serving of Butter lettuce offers 2% of the daily value of calcium.
Because of its delicateness, Boston lettuce is enhanced by sweet flavours that do not mask its subtle taste and damage its tender leaves. In a salad, do not skimp on refreshing vegetables (celery, bell peppers, tomatoes, cucumbers…) and fruits such as oranges or apples to enhance the taste of your lettuce. Garnish it with nuts, the cheese of your choice, croutons or even seafood or smoked fish. You can also use Boston leaves to add colour and freshness to your sandwiches.
